The production of natural cider begins long before the bottles reach the shelves, with the choice of apples being crucial. Unlike regular fruit juices, the balance of acidity, natural sugars, and tannins is essential for cider production. To create a complex and interesting flavor, producers often combine several apple varieties.
In Zakarpattia, a region in Ukraine with centuries-old apple cultivation traditions, high-quality apples are grown specifically for crafting natural cider. The region’s unique combination of mountain air, cool nights, and warm days allows the apples to slowly ripen, accumulating acidity and aroma. This is why Zakarpattia is considered one of the best regions in Ukraine for producing natural cider.
The apple harvest is sorted, washed, crushed, and pressed to extract fresh juice. The key principle of this stage is the rejection of concentrates, powders, or flavorings. High-quality cider is made exclusively from fresh apple juice, not from restored raw materials. During fermentation (which lasts approximately 20–25 days), the apple juice transforms into cider as natural yeast converts fruit sugars into alcohol and carbon dioxide.
After fermentation, the cider is aged, filtered, and prepared for bottling – depending on the style, this can result in dry, semi-dry, or sweeter ciders. When a company grows its own apples, presses their juice, and controls the fermentation process, it ensures quality at every stage – from the orchard to the bottle. This also allows farmers to sell more of their harvest, as not all apples are suitable for retail sale.
In conclusion, the journey from the apple orchard to the cider bottle is a story about nature, the work of farmers, regional traditions, and responsible production methods. In Ukraine, European culture of consuming natural cider is gradually being revived – a culture where quality begins not with the label but with the apple orchard.
